Mixed mushrooms with konyyaku noodles

|Button mushrooms||1/2 cup|
|Enoki mushroom||1/3 cup|
|Corn kernels||1/3 cup|
|Fat free stock||1½ cup|
- Place the stock in fridge the day before and remove fat on the top before use.
- Rinse and slice all mushrooms (except Enoki).
- Boil fat free stock and water, add corn kernels, shitake mushrooms and konnyaku noodles, then simmer for 5 minutes over medium heat.
- Add button mushrooms and enoki mushroom, simmer for another 3 minutes until excessive stock evaporates. Serve hot.
Generally speaking, calories from 7 bundles of konnyaku noodles equal to those from 1/3 bowl of rice. Konnyaku noodles are also high in fibre and can fill up the stomach, so they are good choice for those who are on diet.
