Mixed mushrooms with konyyaku noodles

Ingredients:
Shitake mushrooms 4
Button mushrooms 1/2 cup
Enoki mushroom 1/3 cup
Corn kernels 1/3 cup
Konnyaku noodles 14
Fat free stock 1½ cup
Water 1/2 cup

Method:

  1. Place the stock in fridge the day before and remove fat on the top before use.
  2. Rinse and slice all mushrooms (except Enoki).
  3. Boil fat free stock and water, add corn kernels, shitake mushrooms and konnyaku noodles, then simmer for 5 minutes over medium heat.
  4. Add button mushrooms and enoki mushroom, simmer for another 3 minutes until excessive stock evaporates. Serve hot.

Note:

Generally speaking, calories from 7 bundles of konnyaku noodles equal to those from 1/3 bowl of rice. Konnyaku noodles are also high in fibre and can fill up the stomach, so they are good choice for those who are on diet.
